Egg Bhurji

This is a very easy, almost fool proof, egg recipe that is delicious, nutritious and can be prepared in minutes.


What you'll need..
  • 3 Large eggs
  • 1-2 Green chillies
  • 1 Small onion, finely chopped
  • 1 Small tomato, finely chopped
  • 2 Tbsp oil
  • ¼ Tsp turmeric powder
  • ¼ Tsp pepper powder
  • ½ Tsp chilli powder
  • 2 Tbsp cilantro leaves chopped
  • Salt to taste
How to..
  • Heat oil in a non stick pan.
  • Add the chopped onions and cook for 3-5 mins till the onions turn translucent.
  • Then add the chopped tomatoes and chillies. Also add salt, turmeric, chilli and pepper powder. 
  • Mix well and cook on medium heat for 5 mins till the tomatoes get cooked and turn mushy.
  • Now crack the 3 eggs into the pan and mix them with the onions and tomatoes. 
  • Cook the eggs on a higher heat, mixing constantly till the eggs get cooked and start binding.
  • Once done, mix in the chopped cilantro leaves. Serve hot, with roti.
