Pav Bhaji

One of the most popular street foods in Mumbai, this spicy blend of vegetables will leave you craving for more.



What you'll need..
  • 2 Medium potatoes cut into chunks
  • 1 Cup cauliflower florets
  • 1/2 Cup green peas
  • 1 Large carrot cut into chunks
  • 1 Large onion finely chopped
  • 1 Small green bell pepper finely chopped
  • 2 Large tomatoes, finely chopped
  • 1 Heaping tbsp ginger-garlic paste 
  • 1 Tbsp oil
  • 2 Tbsp butter
  • 1/2 Tsp turmeric powder
  • 2 Tsp Kashmiri chilli powder (Has a bright red color but comparatively mild in heat)
  • 1 Tsp garam masala
  • 1/2 Tsp cumin powder
  • 1 Tsp coriander powder
  • 1-2 Tbsp pav bhaji masala
  • 1 Tbsp chopped cilantro leaves to garnish
  • 1 Tbsp lemon juice
  • Buttered slices of pav
  • Salt to taste
How to..
  • Boil the potatoes, cauliflower, peas and carrot along with turmeric powder till they are tender and mushy. 
  • Mash these vegetables with a potato masher into a soft puree and set aside.
  • In a non stick pan, heat the oil and butter.
  • Add the ginger-garlic paste and cook for about 12-15 seconds till the garlic gets fragrant.
  • Add the chopped onions and green bell peppers and cook for 5-8 minutes till the onions turn pink.
  • Add chopped tomatoes, kashmiri chilli powder, garam masala, cumin, coriander, salt and pav bhaji masala and mix well. Cover with a lid and cook the tomatoes till they soft and mushy, almost a sauce like consistency.
  • Now add the mashed vegetable puree and mix well with the spicy tomato puree.
  • Cover with a lid and cook for 8-10 minutes.
  • Garnish with a few chopped onions, chopped cilantro leaves, fresh squeezed lemon juice and a little chunk of butter. 
  • Serve hot with toasted buttered pav.
