Bruschetta

This is a classic Italian antipasto that is fresh, delicious and ready in minutes. One of my favorites and perfect for entertaining.



What you'll need..
  • 5-6 Slices of French of Italian bakery bread
  • 1 Large tomato, seeds discarded and finely chopped
  • 1 Green onion, thinly sliced
  • 2 Tbsp finely chopped basil (cilantro also works)
  • 1/2 Tsp fresh cracked pepper
  • 2 garlic pods, finely grated
  • 1 Tbsp olive oil
  • Balsamic vinegar
  • Salt to taste
How to..
  • Preheat the oven to 400 degrees Fahrenheit. 
  • Drizzle a few drops of olive oil on the sliced bread and place them on a baking sheet. Place this in the oven and bake for 4-5 minutes till they get crispy and golden brown. Remove from heat and set aside.
  • Add tomatoes, green onions, basil or cilantro, black pepper, salt, garlic and olive oil in a mixing bowl. Mix well and add heaping spoon fulls over the toasted bread slices.
  • Drizzle a few drops of balsamic vinegar over the tomato mixture and serve.
