Panchratni Dal Fry

'Panchratni' means 5 Jewels. This dal is a true delicacy and is named Panchratni because it contains 5 different lentils which makes it high in protein and good for you!



What you'll need..
  • 2 Tbsp moong dal (split yellow moong beans)
  • 2 Tbsp toor dal (split pigeon peas)
  • 2 Tbsp masoor dal (split orange lentils)
  • 2 Tbsp chana dal (split bengal gram)
  • 2 Tbsp urad dal (split white lentils)
  • 2 Cardamom pods
  • 1 Inch piece of cinnamon
  • 1 Large onion , finely chopped
  • 1 Large tomato, finely chopped
  • 1 Tbsp ginger-garlic-chilli paste
  • 1/2 Tsp cumin seeds
  • 1/2 Tsp fennel seeds
  • 1/4 Tsp turmeric powder
  • 1 Tsp chilli powder
  • 2 Tsp coriander powder
  • 1/2 Tsp cumin powder
  • 1/2 Tsp garam masala
  • 2 Tbsp cilantro leave chopped
  • 1 Tbsp lemon juice
  • 3 Tbsp oil
  • Salt to taste
How to..
  • Boil all the dals with water in a pot or pressure cooker till they are soft and tender.
  • Heat oil in a non stick pan. Add the cumin and fennel seeds to it and wait for them to splutter.
  • Add cardamom and cinnamon and fry for about 12-15 seconds. 
  • Add ginger-garlic-chilli paste and onions and fry for 4-5 minutes till the onions start to turn brown.
  • Now add the tomatoes, salt, turmeric, chilli, coriander, garam masala and cumin powder. Mix well and cook on medium heat for 4-5 minutes till the tomatoes get soft and mushy.
  • Add the cooked dal and 1/2 cup of water. Mix well and simmer on medium heat for 8-10 minutes. This mixture of dals tends to get quite thick when cooked so add more water if necessary.
  • Mix in lemon juice and cilantro leaves and serve hot with roti.
