Hara Bhara Kabab

This veg cutlet gets its name from its green color, thanks to all the green veggies that go into it like spinach, peas and cilantro. It tastes great, is ideal for entertaining and is a must try for all the herbivores! 



What you'll need.. (Makes 8-9)
  • 2 Medium potatoes, boiled
  • 1 Heaping cup spinach leaves
  • 1/2 Cup peas
  • 2 Green chillies, chopped
  • 1 Tsp grated ginger/ginger paste
  • 1/4 Cup cilantro leaves, finely chopped
  • 1/4 Tsp pepper
  • 1/2 Tsp Amchoor (Dry mango powder)
  • 1/2 Tsp chilli powder
  • 1/2 Tsp cumin powder
  • 1/2 Tsp garam masala
  • 3 Tbsp corn starch (You can also use about 1/2-3/4 cup of breadcrumbs instead)
  • 6-8 Pieces of cashews
  • Oil for frying
  • Salt to taste
How to..
  • Peel the boiled potatoes and mash them in a large bowl. Ensure that there are no lumps.
  • Blanch the spinach leaves in boiling water for about 1 minute. Then remove the leaves from the hot water and soak them in ice water or just cold water. After about 5 minutes, remove them from the cold water, wipe them with paper towel and finely chop them. Add this to the mashed potatoes.
  • Microwave the peas for a couple minutes till they are soft and then mash them with a spoon or a masher. Add this to the potatoes as well.
  • Now add chillies, cilantro, ginger, amchoor, chilli powder, garam masala, cumin powder, salt, pepper and cornstarch(or breadcrumbs). Mix well till all the ingredients  blend together. 
  • Rub a few drops of oil between the palm of your hands and roll the mashed potato mixture into little balls and shape them like cutlets. 
  • Add a piece of cashew to the top of these cutlets and press down lightly.
  • Heat oil for frying and fry these a few at a time till they are golden brown and crispy. Serve hot.
